That’s why I absolutely love this fluffy sugar cookie recipe with buttercream frosting. This recipe has been in the family for generations, and it is a must for the holidays. Not only are these cookies incredible, but this super easy frosting recipe is the best buttercream icing for cookies! All you need is a few basic ingredients, and you’ll be able to whip up these cookies in no time.

Fluffy Sugar Cookie Recipe with Buttercream Frosting

Ingredients
  

FOR THE COOKIES

  • 2/3 cup shortening
  • 1 cup granulated sugar
  • 2 eggs room temperature
  • 3 cups flour sifted
  • 2 tbsp baking powder
  • 1/3 cup milk
  • 1/2 tsp salt
  • 1/2 tsp vanilla

FOR THE FROSTING

  • 1/2 cup butter softened
  • 1/2 cup shortening
  • 6-8 cups powdered sugar sifted
  • 1 tbsp vanilla
  • 1-3 tbsp heavy cream or milk as needed

Instructions
 

FOR THE COOKIES

  • In a large mixing bowl, use a hand mixer or the paddle attachment of your stand mixer to cream together the shortening and sugar (2-3 minutes) until light and fluffy. Then add the eggs and milk.
  • In a separate bowl, sift the dry ingredients (flour, baking powder, & salt) and whisk them together to combine.
  • Add the dry ingredients to your mixture a little at a time, mixing between additions. Add the vanilla, and mix just until fully combined.
  • Chill the dough in the refrigerator for about 1 hour before rolling it out to cut. Cover your surface with flour to keep your dough from sticking. Use a rolling pin to roll out your dough (about 1/2 inch thick) and cut out your cookies.
  • Place cookies on a greased baking sheet, and bake them at 325 degrees F for 12 minutes. Let them cool for 10-15 minutes before frosting.

FOR THE FROSTING

  • In a large mixing bowl, cream together the butter and shortening (5-6 minutes) until very light and fluffy in texture.
  • Sift in powdered sugar one cup at a time, mixing between additions. Mix in the vanilla, and check the consistency. Add in the milk or heavy cream as needed for smooth texture.
  • Frost your sugar cookies and enjoy!

Notes

  • Avoid overmixing your ingredients. While adding in your flour, mix just until fully combined.
  • You can store any extra frosting in your refrigerator.
