Ingredients
  

  • 2 slices sourdough bread
  • 1 avocado
  • ¼ teaspoon sea salt
  • 2 teaspoon everything bagel seasoning
  • 2 tablespoon microgreens
  • 6 cherry tomatoes halved

Instructions
 

  • Lightly toast two slices of sourdough bread in the toaster or oven.
  • Prepare the avocado by slicing it in half and removing the pit. Remove the avocado from the skin and place it in a small bowl. Mash the avocado until it is as smooth or chunky as desired. Spread the mashed avocado evenly on the two slices of toast.
  • Slice the cherry tomatoes into halves and place them on top of the mashed avocado.
  • Sprinkle the sea salt and everything bagel seasoning on top of the mashed avocado and tomato halves. Finally, add the microgreens on top.

Notes

  • More or fewer tomatoes and microgreens can be added as desired
  • The sourdough can be toasted in the oven if needed. Broil on low for about a minute (this may vary depending on your oven). Watch it closely because it can brown very quickly.
