Our Favorite Fruit Pizza Recipe

These mini fruit pizzas are a super cute and easy-to-share version of traditional fruit pizza. If you’ve never had fruit pizza, it starts with a soft, chewy sugar cookie “crust” topped with a sweet and tangy cream cheese frosting and all the fruit your heart desires. Since the summer season is the prime time for fresh fruit, mini fruit pizzas are one of the BEST summer desserts.

How To Make Mini Fruit Pizzas

  1. Make the sugar cookie crusts. I have an easy sugar cookie recipe that makes the perfect crust for fruit pizza. I like to chill the dough for about an hour before rolling out and cutting so it’s less sticky and easier to work with. Bake on a greased cookie sheet and let cool completely.
  2. Make the frosting. While your cookies are cooling, whip up the cream cheese frosting with a stand or hand mixer. Frost the cookies once they are completely cooled.
  3. Cut up the fruit. Make sure all your fruit is chopped into small bite-sized pieces. Pieces that are too large may be overwhelming or weigh down the crust too much. If you use fruits like apple or banana slices, brushing with a small amount of lemon juice can help prevent them from turning brown too quickly after being cut.
  4. Decorate. You get to be creative here. Use the pieces of fruit to make pretty designs or just pile it on randomly.

Tips For The Perfect Fruit Pizza

  • Don’t overcook the sugar cookies. The best part of the fruit pizza is the soft chewy crust. Overcooking can cause the cookies to be hard and crunchy. Personally, I even prefer them a little undercooked!
  • Cool the crust. Let the cookie crust cool completely before frosting so that the frosting stays nice and thick and doesn’t melt.
  • Wait to add toppings. You can definitely prepare your fruit pizzas ahead of time, but it’s best to wait to add the fruit until the day you plan on serving them. Otherwise, the fruits begin to release juices which can change the appearance and texture of your fruit pizzas and may even cause the crust to go soggy.

What You’ll Need

FOR THE SUGAR COOKIE CRUST

  • ½ cup butter, softened
  • ¾ cup granulated sugar
  • 1 large egg, room temperature
  • 2 tsp pure vanilla extract
  • ½ cups all-purpose flour, sifted
  • 2 tsp cornstarch
  • ¼ tsp salt
  • ½ tsp baking soda
  • 1 tsp baking powder

FOR THE TOPPING

  • 8 oz cream cheese, softened
  • ½ c butter, softened
  • 2 cups powdered sugar, sifted
  • 1 tsp pure vanilla extract
  • Variety of fruit of your choice

** Recipe Yeilds Approx. 18 cookies

INSTRUCTIONS

FOR THE SUGAR COOKIE CRUST

  1. In a large mixing bowl, cream the butter for 1-2 minutes using a stand or handheld mixer. Mix in the sugar on medium speed until fluffy. Beat in the egg and vanilla extract, scraping down the sides of the bowl as needed.
  2. In a separate bowl, whisk together the sifted flour, cornstarch, salt, baking soda, and baking powder.
  3. Mix the dry ingredients into the wet ingredient with the mixer on low speed and continue to mix until fully combined. Chill the dough in the refrigerator for 1 hour to avoid spreading.
  4. Preheat the oven to 350°F and prepare a greased cookie sheet. Once chilled, roll out the dough about ½ an inch thick and cut out your cookies using a round cookie cutter. (I love this round cookie cutter set from amazon.) The 3.3 in is the size I use. Place cookies on the pan evenly spaced. Bake for 8-10 minutes until the edges begin to lightly brown. Remove from the oven and let cool completely.

FOR THE TOPPING

  1. Cream together the cream cheese and butter for 1-2 minutes until smooth. Mix in the vanilla extract. On low speed, slowly mix in the sifted powdered sugar until fully combined.
  2. Cover each cookie in a thick layer of cream cheese frosting.
  3. Decorate with the fruit of your choice & enjoy!
